INGREDIENTS 

Fermentables

5 lbs Pale DME
1 lb Wheat DME

Hops

1 oz Citra (15 min)
1 oz Mosaic (5 min)
2 oz Citra (Dry hop)

2 oz Mosaic (Dry hop)
Yeast

1 packet New England Ale Yeast

Additives

5 oz Priming Sugar

HOPS SCHEDULE    

1 oz Citra (15 min)
1 oz Mosaic (5 min)
2 oz Citra (Dry hop)

INSTRUCTIONS

Prepare Equipment

Sanitize kettle, fermenter, hoses, etc.
Ensure your chilling method is ready; NE IPAs benefit from quick cool to preserve hop aromatics.

Boil & Hop Schedule

Heat 2.5 gallons of water, remove from heat.
Stir in 6 lbs Pale DME + 1 lb Wheat DME until dissolved.
Boil for 60 minutes:
15 min: 1 oz Citra
5 min: 1 oz Mosaic

Cool & Ferment

Cool wort to 68°F, transfer to fermenter, top up to 5 gallons.
Aerate, then pitch New England Ale Yeast.
Ferment at 68°F for ~7 days, add 2 oz Citra + 2 oz Mosaic for 4–5 days of dry hopping.

Conditioning

Avoid steps that clarify the beer too much; the haze is the style.
Keep oxygen exposure minimal.

Packaging

Bottling:
Dissolve 5 oz priming sugar in boiling water, cool.
Rack beer to bottling bucket, stir in sugar solution gently.
Fill bottles, cap. Condition for 2–3 weeks.

Kegging:
Transfer to sanitized keg, purge with CO₂.
Carbonate at 12 PSI, 38°F for 2–3 weeks or to taste.
