Briess Chocolate Malt 1 lb. is roasted to a dark color at temperatures up to 450 degrees. They watch the roast closely and cool it very quickly when it reaches the desired color. The fast cooling assures consistency in coloring. Chocolate malt is referring to the color, not the flavor. It has a deep red color when brewed and has a nutty to a roasted taste. The taste highly depends on the amount used in the grain mix.
