INGREDIENTS 

Malts:
12 lbs Pale Malt (2-Row)
1 lb Carapils (Dextrin) Malt
0.75 lb Light Crystal Malt (20L)

Hops:
1 oz Magnum Hops (60 min)
1 oz Columbus Hops (30 min)
1 oz Simcoe Hops (15 min)
1 oz Chinook Hops (10 min)
1 oz Amarillo Hops (0 min)
2 oz Mosaic Hops (Dry Hop for 5 days)
2 oz Cascade Hops (Dry Hop for 5 days)
2 oz Nelson Sauvin Hops (Dry Hop for 5 days)

Yeast:
2 packets American Ale Yeast

Additives:

5 oz Priming Sugar
1 Muslin Bag

HOPS SCHEDULE

1 oz Magnum at 60 minutes (bittering).
1 oz Columbus at 30 minutes (bittering/flavor).
1 oz Simcoe at 15 minutes (flavor).
1 oz Chinook at 10 minutes (flavor/aroma).
1 oz Amarillo at flameout (aroma).

Dry Hopping:

Add 2 oz each of Mosaic, Cascade, and Nelson Sauvin hops directly to the fermenter after primary fermentation.
Let the beer sit for 5 days before packaging.

INSTRUCTIONS

 

Prepare Equipment:

 

Sanitize all brewing equipment thoroughly.

Mash:

 

Heat 4 gallons of water to 165°F.
Add crushed grains to your mash tun and mash at 150°F for 60 minutes, stirring occasionally.

Sparge:

 

Heat 4 gallons of water to 170°F for sparging.
Slowly rinse the grains, collecting about 6.5 gallons of pre-boil wort.

Boil:

 

Bring the wort to a rolling boil.
Add hops at the following times:
1 oz Magnum at 60 minutes (bittering).
1 oz Columbus at 30 minutes (bittering/flavor).
1 oz Simcoe at 15 minutes (flavor).
1 oz Chinook at 10 minutes (flavor/aroma).
1 oz Amarillo at flameout (aroma).
Boil for a total of 60 minutes.

Cool and Transfer:

 

Cool the wort rapidly to 68°F using an immersion or counterflow chiller.
Transfer the cooled wort to a sanitized fermenter and top off with water to exactly 5 gallons.

Fermentation:

 

Pitch the 2 packets of yeast into the fermenter.
Ferment at 68°F for 10–14 days.

Dry Hopping:

 

Add 2 oz each of Mosaic, Cascade, and Nelson Sauvin hops directly to the fermenter after primary fermentation.
Let the beer sit for 5 days before packaging.

Packaging:

 

Bottle or keg the beer, carbonating to approximately 2.4 volumes of CO₂.
Allow the beer to condition for 2 weeks before serving.
