HOPS SCHEDULE
Citra® hops at the start of the boil for bitterness.
Cryo Mosaic® hops with 15 minutes remaining for flavor.
Cryo Simcoe® hops with 5 minutes remaining for aroma.
INSTRUCTIONS
Prepare Equipment:
Sanitize all brewing equipment thoroughly.
Steep Specialty Grains:
Heat 2.5 gallons of water to 155°F.
Add Munich Malt, Vienna Malt, and Caramel Malt to a mesh bag and steep for 30 minutes.
Remove the grains, ensuring not to squeeze the bag to avoid extracting unwanted tannins.
Dissolve Extracts:
Remove the pot from heat and gradually stir in the Pilsner DME and Pale DME until fully dissolved.
Return to heat and bring to a boil.
Boil:
Add Citra® hops at the start of the boil for bitterness.
Add Cryo Mosaic® hops with 15 minutes remaining for flavor.
Add Cryo Simcoe® hops with 5 minutes remaining for aroma.
Boil for a total of 60 minutes.
Cool and Transfer:
Cool the wort rapidly to 50°F using an immersion or counterflow chiller.
Transfer the cooled wort to a sanitized fermenter.
Fermentation:
Pitch the W-34/70 yeast into the fermenter.
Ferment at 50°F for about two weeks.
Dry Hopping:
Add 1 oz Cryo Citra® hops to the fermenter three days before the end of fermentation for additional aroma.
Lagering:
After primary fermentation, gradually lower the temperature to 34°F over a few days.
Lager at 34°F for 4-6 weeks to develop clarity and flavor stability.
Packaging Options:
Priming for Bottling:
Dissolve 5 oz priming sugar in 2 cups boiling water. Cool and add to bottling bucket. Transfer beer on top to mix evenly. Bottle and cap securely. Condition bottles at room temperature for 3-4 weeks before serving.
Kegging:
Transfer beer to a sanitized keg. Carbonate at 15 PSI and store at 38°F for 2-3 weeks before serving.
