This is the kind of beer you brew for cool evenings and quiet moments, rich, robust, and endlessly comforting.
Your all-grain journey begins with 8 lbs of Maris Otter Pale Malt, the traditional British base malt known for its warm, biscuity flavor and depth. To that, you’ll add 1 lb of Chocolate Malt for its dark cocoa undertones and 1 lb of Munich Dark Malt to deepen the malt complexity with a touch of bread crust sweetness. A dose of 0.5 lb of Black Patent Maltbrings roasted depth and a subtle edge of smoke, while 0.5 lb of Caramel Malt – 80L lends a balancing layer of sweetness and color, rounding out the malt profile beautifully.
For balance and structure, 1 oz of Fuggle Hops is added at 60 minutes, providing that soft, earthy bitterness that allows the malt character to shine through without overwhelming your palate. Fermentation is powered by Safale S-04 Ale Yeast, a classic English strain prized for its clean, malty finish and reliable performance.

INSTRUCTIONS
Prepare Equipment:
Sanitize all brewing equipment thoroughly.
Mash:
Heat 4 gallons of water to 152°F.
Add all malts to your mash tun and mash at 152°F for 60 minutes, stirring occasionally.
Sparge:
Heat 4 gallons of water to 170°F for sparging.
Slowly rinse the grains, collecting about 6.5 gallons of pre-boil wort.
Boil:
Bring the wort to a rolling boil.
Add 1 oz Fuggle hops at the beginning of the boil.
Boil for a total of 60 minutes.
Cool and Transfer:
Cool the wort rapidly to 68°F using an immersion or counterflow chiller.
Transfer the cooled wort to a sanitized fermenter.
Fermentation:
Pitch the Safale S-04 yeast into the fermenter.
Ferment at 68°F for 7–10 days.
Packaging:
Bottle or keg the beer, carbonating to approximately 2.5 volumes of CO₂.
Allow the beer to condition for 2 weeks before serving.
