Melanoidin Malt
Melanoidin malt is a specialty malt designed to intensify malt richness and enhance body. It is kilned to promote melanoidin formation, the same compounds developed during decoction mashing, giving you similar depth and complexity without the added process. This kilning process produces more dextrins than fermentable sugars and will have little to no effect on potential alcohol.
It contributes deep golden to amber color along with rich notes of bread crust, toast, and a concentrated malt sweetness. Used in small amounts, it enhances malt character, improves fullness, and adds a more rounded finish. Melanoidin malt is a useful tool when you want to build depth and complexity into a recipe without extending the brew day.
