Additives:
Check the appropriate box near the product image that indicates how you intend to make your wine.
Acid Blend: You will receive an acid blend packet to balance your must at a 3.5 pH. That is the minimum acidity required for sulfites to be effective as a preservative. The acid blend packet will be specific to your selection for light, medium or big bodied wine. You can make additional acidity adjustments based on your preferences.
Carbon and Bentonite: Your concentrate comes with carbon and bentonite for color correction. Finer Wine Kits concentrates are not ultra pasteurized to maximize the authenticity of your wine. White grape concentrates are subject to slight browning due to an enzyme that would be otherwise neutralized during pasteurization. In addition to color correction, there are also other benefits. Carbon improves flavor and aroma by removing esters related to the browning process. It is widely used in commercial white wine production as fresh grapes begin browning almost immediately after pressing. See disclaimer below for additional information.
No other additives are included. If you have a winery, you have your own supplies however, if you wish to purchase additives, here are some quantity/weight guidelines.
Oak: Add to Taste Preference
Yeast Packets: 1 5g packet per 6 gallons of finished wine. (We recommend Lalvin D-47 or QA23 for lower temperature ferments)
Chitosan: 1.2 oz per 6 gallons of finished wine
Kieselsol: (12.5-25.0 ml per 6 gallons of finished wine)
Mixing Ratio Guidelines:
You have the option to vary your ABV to your specifications. Here are some mixing ratio guidelines. You can select your grape skin and seed quantities to correspond to your preferences.
Big Body:
- Yield: 603 liters, 728-780 750ml Bottles
- ABV: 14-14.5%
- Water Addition: 100-110 gallons
- OSG: 1.100-1.110
Medium Body:
- Yield: 690 liters, 840-900 750ml Bottles
- ABV: 12.5-13.5%
- Water Addition: 120-130 gallons
- OSG: 1.090-1.010
Light Body:
- Yield: 775 liters, 940-1020 750ml Bottles
- ABV: 11-12%
- Water Addition: 150-160 gallons
- OSG: 1.080-1.090

Disclaimer:
54-Gallon Drums are intended for wineries with larger production capacities. Because Finer Wine Kits concentrates are not ultra pasteurized, there is a tradeoff between freshness and convenience. They cannot be stored at room temperature. Be prepared to make your wine after your concentrate arrives at your facility. If you have adequate refrigeration and can store unused concentrate, it must be refrigerated below 38 degrees F. If you are unable to make the entire drum and do not have adequate refrigeration, we recommend you choose from our winery series kits that make smaller batches.
Carbon and Bentonite are included with your concentrate. You will receive directions for how to use them with your concentrate that also incorporate Chitosan and Kieselsol. While the employment of this process is not required, if you do not use it, it may result in a white wine that is darker in color. Read the Carbon and Bentonite section under additives above for more information.
