HOPS SCHEDULE
2 oz Simcoe Hops at 60 minutes.
1 oz Citra Hops at 15 minutes.
1 oz Mosaic Hops at 10 minutes.
1 oz Simcoe Hops at 5 minutes.
INSTRUCTIONS
Prepare Equipment:
Sanitize all brewing equipment thoroughly.
Mash:
Heat 4.5 gallons of water to 152°F. Add 2-Row Brewer's Malt, Goldpils Vienna malt, and Caramel Malt 20L to the mash tun. Mash at 152°F for 60 minutes.
Sparge:
Heat 4.5 gallons of water to 170°F. Sparge grains, collecting 7 gallons of pre-boil wort.
Boil:
Bring wort to a boil (60 minutes total). Add hops at the following intervals:
2 oz Simcoe Hops at 60 minutes.
1 oz Citra Hops at 15 minutes.
1 oz Mosaic Hops at 10 minutes.
1 oz Simcoe Hops at 5 minutes.
Cool and Transfer:
Cool wort to 68°F using an immersion or counterflow chiller. Transfer to a sanitized fermenter.
Fermentation:
Pitch both packets of SafAle US-05 yeast into the fermenter. Ferment at 68°F for 2 weeks or until fermentation is complete.
Dry Hopping:
Add 2 oz Citra and 2 oz Mosaic hops to the fermenter 5 days before bottling or kegging.
Packaging Options:
Priming for Bottling:
Dissolve 5 oz priming sugar in 2 cups boiling water. Cool and add to bottling bucket. Transfer beer on top to mix evenly. Bottle and cap securely. Condition bottles at room temperature for 3-4 weeks before serving.
Kegging:
Transfer beer to a sanitized keg. Carbonate at 15 PSI and store at 38°F for 2-3 weeks before serving.
