HOPS SCHEDULE
1 oz Magnum at 60 minutes (bittering).
1 oz Citra at 15 minutes (flavor).
1 oz Amarillo at 10 minutes (flavor).
1 oz Cascade at 5 minutes (aroma).
INSTRUCTIONS
Prepare Equipment:
Sanitize all brewing equipment thoroughly to prevent contamination.
Mash:
Heat 3.5 gallons of water to 165°F.
Add crushed Pale Malt, Wheat Malt, and Flaked Oats to your mash tun.
Mash at 150°F for 60 minutes, stirring occasionally to maintain temperature.
Sparge:
Heat 4 gallons of water to 170°F for sparging.
Slowly rinse the grains with sparge water, collecting wort until you have about 6.5 gallons of pre-boil wort.
Boil:
Bring the wort to a rolling boil.
Add hops and adjuncts according to the following schedule:
1 oz Hallertau Mittelfrüh at 60 minutes (bittering).
1 oz Orange Peel and 0.5 oz Coriander Seeds at 10 minutes (flavor and aroma).
Boil for a total of 60 minutes.
Cool and Transfer:
Rapidly cool the wort to 68°F using an immersion or counterflow chiller.
Transfer the cooled wort to a sanitized fermenter and top off with water to reach exactly 5 gallons.
Fermentation:
Pitch the Belgian Witbier Yeast into the fermenter.
Ferment at 68°F for 10–14 days, ensuring a stable temperature to develop the desired yeast character.
Packaging:
Bottle with priming sugar or keg the beer, carbonating to approximately 2.4 volumes of CO₂.
Allow the beer to condition for 2 weeks before serving to allow the flavors to meld.

Good sanitation practices are absolutely fundamental to good beer making. Five Star San is the premier sanitizer you will need to make your Lunar Wit - Blue Moon Belgian White Clone beer kit. A great practice for extra protection is to have a spray bottle filled with sanitizing solution so you can re-sanitize everything that touches or goes near your beer. Sanitation is much more difficult with beer than wine because beer has a higher pH. Wine's high acidity makes bacterial infection less likely but with beer, one small mishap can cost you your batch.
When your Lunar Wit - Blue Moon Belgian White Clone is done, you will need bottles. This standard 12 ounce bottle is a good choice. You will need 54 for a 5 gallon batch. Bottles do not come with caps.

Auto-siphons are a great luxury item to have in your brew equipment. Once you have one you will never go without it again. Don't forget to use a heavy duty sanitizer to clean it since you don't want to replace it as often as hoses. A good sanitizer for that job is Five Star San.

Bungs and stoppers should also be periodically replaced. They can dry out and harbor bacteria.
Keeping your carboy clean before and after use is key to avoid bacterial infection in your beer. A carboy brush is a great tool to get into those nooks and crannies.

Hooks up straight to your faucet with the bottle washer adapter (#4804) and puts out plenty of pressure to clean those stubborn stains from beer bottles that have been sitting around.
When you bottle your Lunar Wit - Blue Moon Belgian White Clone, you will need to cap your bottles. This capper is inexpensive, easy to use and does not require attaching to a counter. It has a magnet to hold the cap in place.
