Maris Otter / Pale Ale Malt
Maris Otter and Pale Ale malts are richer, more expressive base malts used when you want the malt character to stand out. Compared with standard brewer’s 2‑row, they have a slightly higher kiln level and darker color, which brings deeper flavor with notes of biscuit, toast, and a fuller, rounder malt presence. They provide roughly the same enzymatic (diastatic) strength as lighter 2‑row, so they work the same in mash conversion, but deliver more malt complexity and body.
These malts are ideal for styles where balance leans toward malt, such as English ales, ambers, and porters. If you want more depth and character in your base without changing mash techniques, this is where you start.
