The Tempranillo Wine Kit Limited Release, Ultima was created expressly for you. It is Finer Wine Kits’ most ambitious expression of what a home wine kit can become, designed for the winemaker who wants to pursue the absolute limit of quality rather than settle for an easier or merely satisfactory result.

Your kit produces approximately 15 bottles at a kit cost of roughly $11 to $13 per bottle. The goal is an elite, cellar-worthy Tempranillo capable of rivaling commercial wines selling for $50 or more. A comparable 15-bottle collection could cost approximately $750. With Ultima, you can pursue that caliber of wine for less than one-third of the retail cost.

Ultima is not intended for everyone. It is for the winemaker who measures success against exceptional commercial wine, takes personal pride in what enters the bottle, and believes the finest wine in the house should be the wine they made themselves.

With Ultima, you will use a professional winemaking approach also employed by some commercial wineries. Winery-grade varietal grape concentrate is combined with freshly crushed California grapes and juice. Fresh Tempranillo skins from the pressing complete the experience, giving you access to the same categories of premium grape materials used in commercial wine production.

The concentrate provides a deep and consistent foundation of varietal flavor, body, and fermentable grape solids. Freshly crushed Tempranillo contributes vibrant harvest character and aromatic detail. During fermentation, the fresh skins allow you to extract rich color, rounded tannin, supple texture, and phenolic complexity.

Fresh-Grape Character Without the Equipment

Producing three gallons of wine entirely from fresh grapes could require approximately 50 to 60 pounds of fruit. You would also need the equipment, space, and knowledge necessary to crush, destem, ferment, and press the grapes properly.

Ultima gives you the concentration, structure, and fresh-harvest character of serious red winemaking without requiring a crusher, destemmer, wine press, or extensive experience processing fresh grapes.

Flavor Profile

Using Tempranillo grapes from Lodi, California, you can create a dry, richly aromatic red with concentrated layers of red cherry, black cherry, raspberry, strawberry, and pomegranate. Subtle notes of red licorice, dried leaves, earth, leather, and warm spice provide a savory counterpoint to the generous fruit.

Lodi’s Mediterranean climate, with warm days and cool nights, encourages ripe fruit and aromatic intensity while helping the wine retain balance and definition. Limited Harvest Release

Ultima production corresponds with the California grape harvest. Only a small quantity of each varietal will be produced, so every kit must be reserved by preorder. Expected delivery is in November.

Equipment Requirements

  • One kit produces approximately 3 gallons, or 15 bottles.

  • You can ferment one kit in a standard 7.9-gallon fermenter.

  • You will need a 3-gallon carboy for secondary fermentation and aging.

  • Compatible fermenters and carboys can be selected from the menu options above.

Six-Gallon Batches and Custom Blending

You can combine two Ultima varietals to produce a traditional 6-gallon batch or create your own proprietary blend. Fermenting two kits together requires a 10-gallon fermenter.

Disclaimer:

You must either start your kit upon receipt or have the ability to freeze both the juice bag and skins prior to use. Not only do they contain non ultra pasteurized concentrates, they also contain unprocessed fresh squeezed grape juice and fresh grape skins. Your juice bag will contain low levels of sulfites as preservatives. However, this will only delay spontaneous fermentation, not stop it. You must either freeze or make your kit as soon as you receive it.
