Add crushed grains to your mash tun and maintain mash at 150°F for 90 minutes, stirring occasionally.
Sparge:
Heat 4 gallons of water to 170°F for sparging.
Slowly rinse the grains, collecting about 6.5 gallons of pre-boil wort.
Boil: 75 minute boil
Bring the wort to a rolling boil.
Add hops at the following times:
- 1oz - German Perle Hops (60 minutes)
- 3/4 oz - Czech Saaz Hops (10 minutes)
- 1/4 oz - Czech Saaz Hops (Flame Out)
Cool and Transfer:
Cool the wort rapidly to 68°F using an immersion or counterflow chiller.
Transfer the cooled wort to a sanitized fermenter and top off with clean, filtered water to exactly 5 gallons if needed.
