Your journey begins with 3 lbs. of Pale Ale Dry Malt Extract and 4 lbs. of Pilsen Light Dry Malt Extract. These are the backbone of your brew, providing a solid base for the storm of flavors to come.

Next, you'll encounter 1 lb. of Victory Malt and 1 lb. of Maris Otter Malt. These malts are the dark clouds on your brewing horizon, adding depth and complexity to your beer. They're the ones responsible for the rich, chocolate caramel flavors that make the Storm Sinker Porter so irresistible.

But what's a storm without a little lightning? That's where the 8 oz. of Caramel Malt 60L and 8 oz. of Carapils Malt come in. These malts strike your palate with a flash of sweetness, perfectly balancing the darker flavors.

And then, the hops. Oh, the hops. 3 oz. of Amarillo Hops, 3 oz. of Columbus Hops, and 1 oz. of Warrior Hops. These are the winds that whip up the storm, adding floral and earthy notes that swirl around your taste buds, creating a beer that's as complex as it is delicious.

But be warned, this isn't a beer for the faint of heart. It's a beer that demands your attention, a beer that pulls you under with its depth of flavor. So, are you ready to take the plunge? - 6 lbs. Amber Dry Malt Extract
- 12 oz. Caramel 60L Malt
- 8 oz. Chocolate Malt
- 8 oz. Roasted Barley Malt
- 1 oz. Northern Brewer Hops
- 1 oz. Fuggle Hops
- 1 oz. Cascade Hops
- Yeast Energizer / Irish Moss Combo Packet
- 1 Packet of Dry Yeast (Lallemand London ESB Ale)


- 60 minutes: 1 oz. Northern Brewer (Bittering)
- 30 minutes: 1 oz. Fuggle (Aroma / Flavor)
- 3-4 days Dry Hop (Secondary) : 1 oz. Cascade Hops


1. Heat 2-3 gallons of water to 155°F.
2. Place grains in a grain bag and steep in the hot water for 30 minutes.
3. Remove the grain bag and discard.
4. Bring the wort to a boil.
5. Once boiling, add the malt extract and stir until fully dissolved.
6. Add the hops according to the hop schedule.
7. Boil for 60 minutes, stirring occasionally.
8. At 15 minutes add Yeast Energizer / Irish Moss Combo Packet.
9. Cool the wort to 70°F.
10. Transfer the wort to a fermenter and top off with cold water to 5 gallons.
11. Pitch the yeast and seal the fermenter.
12. Ferment at 68-70°F for 5-7 days.
13. At this time transfer to your secondary fermenter and add your dry hops.
14. Continue fermenting at 68-70°F for and additional 5-7 days.
15. Transfer to a bottling bucket and stir in 5 oz. priming sugar. Mix until evenly distributed and bottle your beer.
16. Once bottled, allow 2 weeks for carbonation in a cool, dark room. Enjoy!

Good sanitation practices are absolutely fundamental to good beer making. Five Star San is the premier sanitizer you will need to make your Storm Sinker Porter beer kit. A great practice for extra protection is to have a spray bottle filled with sanitizing solution so you can re-sanitize everything that touches or goes near your beer. Sanitation is much more difficult with beer than wine because beer has a higher pH. Wine's high acidity makes bacterial infection less likely but with beer, one small mishap can cost you your batch.

When your Storm Sinker Porter is done, you will need bottles. This standard 12 ounce bottle is a good choice. You will need 54 for a 5 gallon batch. Bottles do not come with caps.

The 5 gallon carboy pictured here is the standard size for any beer kit. If you have never worked with a carboy, it is important to know they should not be moved full without a carboy handle or a carrier.

Wort Chillers and Thermometers are long term investments. It is important to chill your Storm Sinker Porter wort quickly. The quicker you chill it the stronger the cold break will be. You also need a good thermometer that reads fast temperature fluctuations.  


Auto-siphons are a great luxury item to have in your brew equipment. Once you have one you will never go without it again. Don't forget to use a heavy duty sanitizer to clean it since you don't want to replace it as often as hoses. A good sanitizer for that job is Five Star San. 


The fermenter pictured here is standard for a 5 gallon beer kit.


 Many people reuse their hoses for far too long. Replacing your hoses often or even using as single use items is highly recommended with beer making. Hoses are very hard to clean and beer is very susceptible to bacterial infection. You do not want to risk losing your  Storm Sinker Porter over a few feet of unsanitary hose. 


Pouring your wort into a carboy can be tricky. Use a big funnel made just for the job. They even have different mesh screens to remove particles. 


It is recommended to replace airlocks often. Because they never physically touch the beer, the sanitation risk is too often overlooked. Bacteria can spread without physical contact in a closed environment and plastic stubbornly harbors bacteria.

Bungs and stoppers should also be periodically replaced. They can dry out and harbor bacteria.

Keeping your carboy clean before and after use is key to avoid bacterial infection in your beer. A carboy brush is a great tool to get into those nooks and crannies.

Stainless Steel Carboy and Bottle Washer is a convenient way of cleaning your bottles and/or carboys.  This high quality tool will come in handy.  Hooks up straight to your faucet with the bottle washer adapter (#4804) and puts out plenty of pressure to clean those stubborn stains from beer bottles that have been sitting around.

When you bottle your Storm Sinker Porter, you will need to cap your bottles. This capper is inexpensive, easy to use and does not require attaching to a counter. It has a magnet to hold the cap in place.  





At the end of summer, bines of hops are harvested and separated. To reduce moisture content, the hops are then spread out on the upper floor of an oast house and heated by heating units on the lower floor. Once dried, they are compressed into bales by a baler.
