This yeast is highly recommended for the production of fruitier and more estery lagers, providing your beers with a good length on the palate. The yeast strain used is Saccharomyces pastorianus, known for its versatility in producing a wide variety of beer styles.

The yeast is suitable for a variety of beer styles including Bock, California Common, Dopplebock, Dortmunder, Mai Bock, Marzen/Octoberfest, Schwarzbier, and Vienna. To ensure a healthy cell count, especially in the production of lagers, it is recommended to pitch 2 yeast packets per 5-gallon batch.

The optimal fermentation temperature for Saflager S-23 Dry Lager Yeast is 48-71 F, ideally between 54-59 F. It offers an attenuation of 77% - 82% and high flocculation. The yeast comes with a viable cell count at packaging of over 6,000,000,000 per gram.
