Your Lallemand Sourvisiae Brewing Yeast is a bioengineered ale yeast strain (Saccharomyces cerevisiae) that produces lactic acid during fermentation and will impart a strong citrus quality to your beer. Sourvisiae contains a single genetic modification, a lactate dehydrogenase gene from a food microorganism perfect for sour beers.
