Oat Malt
Oat malt is a base malt that adds fermentable sugars along with a smooth, rounded texture. While it has enough enzymatic activity to contribute to conversion, it is most often used alongside barley malts to support the mash and build mouthfeel. While not typically required, rice hulls are helpful to reduce lautering issues. Oats in general cause 'sticky' mashes and need to be considered in building them into a grain bill. Using above 30% of the grain bill is not advised due to this.
It brings a subtle, grainy flavor with a soft, slightly nutty character. Its real impact is in the body. Oat malt enhances fullness, creates a creamy texture, and improves head retention. It is commonly used in hazy styles and stouts, but can be added to many recipes when you want a smoother, more polished finish.
