Roasted Malts
Roasted malts are specialty grains that bring deep color and bold, roasted flavors to your beer. They are kilned at high temperatures, which darkens the grain and develops intense characteristics that range from smooth cocoa and coffee to sharp roast and light bitterness.
Unlike base malts, roasted malts contribute little to no fermentable sugars and will not contribute as much to the original gravity reading as base malts. They are used primarily for color, flavor, and aroma. They are essential in darker styles like porters and stouts, but can also be used in small amounts to adjust color or add subtle complexity. Roasted malts have a lower pH and will have a slight effect on the overall mash. Be careful to watch mash pH to ensure an ideal 5.2 - 5.6 pH range.
